Rosé wine made with the Listán Negro variety is macerated for a maximum of 12 hours in the cold and then undergoes a gentle pressing with a yield of 60% once we have the must in the tank we let it ferment at a controlled temperature of 12 to 14ºC.
This wine is very demanding in its elaboration since one of the things that is most valued in a rasado is its tonality. That is why the work in the cellar must be very precise, taking care of the preservation of the wine to avoid excessive oxidation that would ruin this production.
